Lemon curd

This one is a definite winner.  I had a hard time canning it, rather than sitting down with the pot and a spoon.  Delicious!

The banana jam was way too sweet.  The boys don't even want to eat it.  It might make a good filling for tarts or something. 

Back to beans today.

  2. I love lemon curd. I could sit and eat it with a spoon, too. Isn't it something we are not supposed to be able to can safely? Have you had success canning this before? Maybe I will try canning lemon curd.

    1. If you read the comments in the link as well, there's another link to lime curd, which is approved by 'the powers that be'. I'm going to trust Enola, but of course, I don't recommend that anyone else try it at home either.

      If you find us all dead from botulism someday, don't eat the canned goods, lol.

    1. Mom used to make lemon pie, and I would eat the pie filling and leave the crust. Hmm. Maybe I should can the next batch in smaller jars and call them 'mom's pudding cups', lol. I used some as a topping on cake, and I have a danish recipe I want to try.

    I serve it with chocolate pound cake to be spread as one wishes. However, I have seen people put my lemon curd over blueberry pie. That is just not right...lol.
